Eva Mendes is the cover girl for the new issue of Marie Claire and the sexy actress dished on everything from her beau, Ryan Gosling, to her beauty routine. We choose not to believe that she's dating Gosling (yes, we're in denial). However, we're more than interested to learn how she stays beautiful.

Of course, Mendes was more than happy to talk about that.

"I don't eat meat and stopped eating chicken - my skin has gotten a lot better," she told the magazine.

Many celebrities cite vegetarian or vegan diets for their sexy bodies and healthy skin. Who else is on the bandwagon?

Alicia Silverstone

Actress Alicia Silverstone is one of the most outspoken celebrities for animal rights. The strict vegan reps EcoTools, a brand of cruelty-free makeup brushes and also boasts clear skin.

"I had full blown cystic acne when I got off the pill," she told MySkinAffair of her problem skin. That all changed when she switched to an all-natural vegan diet. "My skin is flawless and I can say that bragging now because I was so ashamed of my skin for so many years."

Megan Fox

Thousands of men consider Megan Fox to be one of the most beautiful women in the world. She credits her beauty to a vegan diet, even though she no longer follows it.

"For a year and a half, until about four months ago, I followed a strict vegan diet based on raw fruits and vegetables," Fox said in 2011. "No bread, no sugar and coffee. But I had lost too much weight."

She reportedly weighed a skeletal 99 lbs while filming "Jennifer's Body" in 2009.

Olivia Wilde

For many women, an energetic feeling equals beauty. Olivia Wilde lives by this view - and she credits her vegan lifestyle for this feeling.

"Beyond my desire to boycott the torture factories, I am also way happier when I eat a plant based diet, and I feel about a thousand times more energetic," she told PETA in 2010.

Woody Harrelson

Beauty isn't only for women. Actor Woody Harrelson credits his vegan diet for helping clear the terrible acne he had as a teen. The "Hunger Games" actor said his skin is clearer and brighter, thanks to his meat-free lifestyle.
